Pad Ka Prow (Basil Stir Fry)

Great with rice, with garlic butter noodles (pictured) and an over easy egg, in lettuce wraps, or plain. Don’t be scared of fish sauce since it doesn’t smell after you cook it all up

Vegetarian (with substitutions)

Serves 4

Ingredients

1lb ground chicken (or turkey, pork, beef, extra firm tofu)
2 tbs soy sauce
1 tbs fish sauce
2 tsp sugar
4-5 cloves of garlic
1 shallot
3-5 thai chilis
1 bunch Thai basil (or normal)
Olive oil
Chicken broth
Sriracha

Preparation

19. In a wok over high heat, add the oil, chilies, shallots and garlic, and fry for 1-2 minutes. Add the ground chicken and stir-fry for 2 minutes, breaking up the chicken into small bits.
20. Add the sugar, soy sauce, fish sauce and some sriracha. Stir-fry for another minute and deglaze the pan with the broth. Because your pan is over high heat, the liquid should cook off very quickly.
21. Add the basil, and stir-fry until wilted. Serve over rice.
